A colleague put me on to this: The French are building Guedelon Castle according to 13th century techniques -- and yes, this means the process will take decades.

The Discovery Science channel is currently running a show produced in 2006, called "Europe in the Middle Ages." The first half deals mostly with jousting and the technology behind plate armor, but the second half is filmed at Guedelon castle. The head builder is interviewed, and he gives an all too brief overview of some of the techniques that they are employing. It is worth watching. Thanks for the blogroll-add, by the way.
